Okra has fed Karachi serious, Mediterranean-leaning cooking since the ’90s. TestKitchen is its smaller, louder sibling next door — an open kitchen where the bakers and chefs work right in front of you and every new bake goes through trial after trial before it earns a spot on the pass.

The flour mix moves with what we can import. The menu moves with what we’re obsessed with this week. The bread is always real.
